We warmly invite you to a cookery workshop on fermentation and the zero-waste philosophy, during which participants will learn how to prepare pickles and fermented vegetables – a traditional way of preserving the flavours of the season and reducing food waste.

What you’ll learn
During the meeting:
- how pickling and marinating can help extend the shelf life of vegetables,
- how to combine local ingredients with spices to create a unique flavour,
- how to easily build up your own home supplies.
Workshop programme
- Introduction on the basics of fermentation and the properties of pickles and preserved vegetables,
- Step-by-step guide a selection of pickles and fermented vegetables,
- Overview of the rules the safety and storage of fermented products,
- Practical tips, how to use surplus vegetables for pickling and marinating,
- Tasting and a brief summary of the zero-waste principles for the kitchen.
